Pepper Pots

Ingredients
4 bell peppers any color sliced in half from top to bottom, seeds and membrane removedgarlic, onoin, mushroomsdiced tomaoes, tomatoe saucericecheese
Directions
Saute` garlic, onion and mushrooms in skillet then set aside when soft. Cook turkey and drain if needed. I use white rice from Chinese takeout but you can cook your own. Combine veggies, turkey and can of diced tomatoes. Add to rice and mix well. Fill halfed bell peppers with rice mixture. Spoon sauce liberally over pepper pots. Cook at 350* for about 35 mins or until peppers are soft and stuffing is heated through. Makes 8 servings
