Chicken Rice & Mushroom Soup

Ingredients
1 whole chicken 1 Tbs. onion powder or 1 onoin diced finely1 Tbs. celery flakes or 2 stalks celery diced finely2 tsp chili powder1 tsp black pepper3 quarts water2 tsp sagePut all ingredients in pressure cooker. Cook on high until pressure gauge starts talking to you ( rattling). Cook for additional 20 minutes. When cooled enough for the lid to come off (anywhere from 45min.-1 1/2 hr.) remove chicken and set aside to cool enough to remove bones by hand.In broth add following ingredients: 3 C. brown rice2 c. mushrooms2 cans cream of mushroom soup Bring back to boil and cover. Let boil for 10 minutes stiring occasionally making sure to return lid in between stiring. AT THE END OF THE 10 MIN.; TURN OFF THE FIRE ; LEAVE THE LID ON FOR 25 MIN. MORE. At the end of the 25 min. add following: 2 C. brocoli finely chopped, frozen & thawed1/4 C. shreded colby jack cheeseStir together and replace lid leaving covered for another 15-25 min. or until brocoli is done.

    Absolutely delicious and quite filling. Those that need to eat a few more calories can always add crackers, but you really won't need to add a thing. It is a good warm-your-belly in cold winter days after a hard work out. Loved it and highly recommend it. - 1/28/10
