Curried Rice Pilaf 8 1/2 c servings

Ingredients
3 T Olive oil1/4 c onion - chopped1/4 c celery - chopped1/4 c almonds - chopped1/4 c red pepper - chopped1 clove garlic - minced1 T dried parsley1/2 t salt1 1/2 t curry powder1 1/2 c brown basmati rice3 c water
Directions
saute veggies and nuts in olive oil - add rice and curry powder. Saute for a few minutes and add water. Bring to a boil, cover, reduce heat to minimum and cook for 40 to 45 minutes.
