Mom's Warm Lentil Salad

Ingredients
1 cup uncooked lentils3 cups water1 tbsp olive oil1/2 cup onion, chopped2 cups green bell pepper, chopped1/4 cup cilantro, chopped1/2 tsp salt
Directions
Cook lentils in water until tender. Drain cooked lentils into a holding bowl. Heat oil in pan used to cook lentils. Add onion and sautee for 3 minutes add bell pepper and cook for another 5 minutes.

Add lentils and salt and stir. Add cilantro and heat through then turn off and enjoy.

Makes 3 - 1 cups servings
