whole wheat banana bread

Ingredients
1/4 cup coconut oil1/4 cup apple sauce1 cup brown sugar2 egg whites3 lg bananas (mashed)1tsp lemon juice1 cup whole wheat flour1 cup white flour1/2 cup oatmeal4 tbls wheat germ3 tsp baking powder1/4 tsp salt1/4 cup chopped walnuts
Directions
Cream together coconut oil and sugar.
Add apple sauce.

Beat egg whites until light and fluffy.
Add mashed bananas and lemon juice.
Blend until creamed.
Add all dry ingredients.
(I just mix everything in a food processor starting with the wet ingredients and then add the dry.)

Pour into greased and floured muffin tins. (I use the spray)
Bake 10 min in a 350 degree oven.
Makes 24 muffins.

You can omit the coconut oil and use just applesauce if you wanted a lower fat version.
