Deb's Mac & Cheese

Ingredients
* Cheddar Cheese, 1 cup, diced * *Macaroni, enriched, 1.5 cup elbow shaped * *Smart Balance Buttery Spread, 4 tbsp * Onions, raw, 1 small * Milk, nonfat, 1.75 cup * *Flour, white, .25 cup * Mrs. Dash (R) Original Blend, 3 tsp * Parsley, dried, 1 tbsp
Directions
cook noodles to tender. While noodles are cooking; melt butter and cook diced onion, add dried parsley. When onions are soft add flour and cook 5 more minutes; slowly add milk and Mrs. Dash. Stir constantly, when milk mixture thickens to a low boil, remove from heat and add cheese until melted. Drain noodles and add to melted cheese mixture. We eat this as a feel good main course. Sometimes I add diced ham cubes, but then it changes the calories per serving.
