1/2 c. Yellow Cornmeal1/2 c. Flour1 1/2 tsp Baking Powder1/2 tsp Salt1/2 tsp SugarPinch of Cayenne Pepper1/4 c. Grated Onion1 egg, beaten (medium)1/3 c. Skim Milk2 T. Canola Oil
Preheat oven to 425. Spray Mini-Muffin pan with non-stick spray. Blend cornmeal, flour, baking powder, salt, sugar & cayenne pepper in medium bowl. Stir in onion. Beat egg, milk & oil in small bowl. Add to cornmeal mix & stir just until moist.
Spoon batter into muffin pan. Fill cups 1/2 - 2/3 full. Bake until golden..about 15 - 20 minutes.
