1 block extra firm tofu, cubed1 diced onion.5 cup diced celery2 garlic cloves crushed.5 cup diced red pepper1 tsp salt1 tsp pepper2-3 tbsp chili powder.5 tsp cumin1 lg can diced tomatoes (more if desiered).5 can tomato paste1 can kidney beans (can also use black beans)1 tsp olive oil
heat pot, add oil onion and tofu. cook on med heat for 5 min. add garlic and all seasonings. cook and stir until well blended. add celery, peppers, tomatoes, beans and tomato paste. simmer on low heat, stirring occasionally, until thick, about 75 minutes. add hot pepper flakes to taste before serving if desierd. makes 6 servings.
