Strawberry Muffins

Ingredients
11/4 cups all-purpose flour21/2 tsp baking powder1/2 tsp salt1 cup old fashioned oats1/2 cup Splenda1 cup milk1/2 cup (1 stick) butter, melted1 egg, beaten1 tsp vanilla extract1 cup fresh chopped strawberriesyou can use frozen berries, any berries you likeMargaret
Directions
1) Preheat oven to 425F, grease bottoms only of 12 standard (21/2 inc muffin cups, or line with paper baking cases: set aside

2) Combine flour, baking powder, and salt in a large bowl. Stir in oats and sugar. Combine melted butter, milk, beaten egg and vanilla in a small bowl until well blended, Stir in flour mixture until just moistened. Fold in Strawberries.
Spoon into prepared muffin cups, filling about 2/3rds full.

3) Bake 15 to 18 minutes or until lightly browned and toothpick inserted into centre comes out clean. Remove from pan, Cool on a wire rack 10 - 15mins. Serve warm or cool completely.
