Kicken Chicken and Rice.

Ingredients
Chicken Breast, no skin, 4 breast, bone and skin removed slicesOld El Paso enchilada sauce 14 oz canTomato Paste, 1 can (6 oz) Mushrooms, cooked, 3 mushroom slicedOnions, raw, .5 medium (2-1/2" dia) slicedSweet potato, with skin, diced 1 medium (2" dia, 5" long, raw) 1 1/2 cup cooked rice2 cans of water (use enchilada sauce can)
Directions
Slice up chicken and put in a coated pot heated on high. Cook till half of meat is cooked. Add onions and mushrooms and leave alone while you dice up sweet potato. Add in sweet potato, mix and cover. Turn heat to med-low. When Potato is half wat tender add paste and sauce along with water. When starts simmering add rice. Heat through and you're done.
