Brocoli Soup

Ingredients
2 tbsp olive oil1 large onion chopped2 heads of brocoli cleaned and chopped1 4 cup container of fat free chicken soup broth, if this does not cover all brocoli add some water just to cover-no more.
Directions
add oil to large pot, heat it then add onions sautee untill you can see thru them, about 5 mins. then add chopped brocoli and chicken broth and water if needed. Bring to boil, and then simmer untill brocoli is tender.
In batches put your soup in a blender or food processor, and puree. Its think and creamy with out alot of fat!!! Very good and a great way to get your veggies without eating another salad!!! if you like you can sprinkle with a tbsp of lowfat gratted cheddar. YUM!

    Very good basic soup recipe. I added two carrots, 1 tbs. fresh garlic, .5 tsp of fresh ginger, .5 tsp of ground nutmeg. The extra ingredients gave it a little more zing without adding very many additional calories. - 2/15/10
