Pasta with Zukes, Yellow Squash and Bell Pepper

7.5 oz whole wheat pasta (reserve .25 cup pasta water)1 lbs ground chicken (can substitute turkey)2 tablespoons olive oil divided use2 tsp garlic1 medium red bell pepper cut in chunks2 small zucchini cut in chunks2 small yellow squash cut in thin strips1 14 to 16 oz can of tomatoes1 tsp dried basilsalt and black pepper to taste
Cook ground chicken until no pink remains. Remove from pan and set aside.
Cook and drain pasta according to package directions reserving 1/4 cup pasta water.
In large saute pan heat one tablespoon olive oil add garlic saute 30 seconds, add green pepper, saute 1 to 2 minutes.
Add zucchini and yellow squash, saute another 1 to 2 minutes.
Return ground chicken to pan,and stir or toss to coat, add olive oil as needed to prevent sticking.
Add basil and a pinch of salt and pepper to taste.
Add pasta, and tomatoes and heat through.
Stir or toss to heat and combine.
Makes 4 main dish servings.
