4 cups eggplant, peeled and cubed (soak in salty water for 30 minutes to remove bitterness)6 baby zucchini, cleaned and diced (leave skin on)2 cups onions, chopped2 cups tomatoes, diced (I used a no-name canned variety)3 green peppers, chopped6 cloves garlic, minced (or 2 tbls)1 tsp oregano, dried1 tbl basil1 pinch salt to taste
Makes 6, 2 cup servings.
Prepare all your veggies.
Throw into a slow cooker, turn it on and walk away.
