Peel potatoes (1.5 lbs) and quarter. place in a large pot of cold water over med heat and bring to a boil. cook until tender, about 15 min. drain reserving about 1/2 cup liquid. mash potatoes with butter and salt and pepper adding the reserved water as needed to make them light and fluffy. in the meantime, spray a large nonstick pan with cooking spray, chop onion, carrot and celery and cook on low heat until softened. add the ground meat and cook until browned. spoon off any fat. add flour, continue cooking for 2-3 min. add beef broth and herbs, reduce heat and simmer for 5 min. pour the mixture into a casserole dish (i use a glass pie plate unless doubling recipe), spread pots over the top. Bake at 400 for about 30 min. until pots are browned and dish is bubbly. Enjoy!Should make 4 nice servings!
