Huevos Rancheros

Ingredients
* Egg substitute, liquid (Egg Beaters), .5 cup * Beans, black, 1/4 cup (pre-cooked or canned) * 6" Low Carb Wheat Tortilla * Salsa, 3 tbsp * Cheddar Cheese, 1/8 cup, shredded * Sour Cream, reduced fat, 1 tbsp
Directions
Scramble egg beaters in a non-stick pan (use cooking spray if needed)

While eggs are cooking warm the beans through on the stove in a separate pan

Warm tortilla in the microwave or on the stove

Lay tortilla in a shallow bowl

Top tortilla with ingredients in the following order: beans, eggs, cheese, salsa and sour cream. Enjoy!
