Spinach and Feta Quiche

1/4 cup light mayonnaise1/3 cup milk4 eggs8 oz feta cheese1 tsp olive oil1 package (10 oz) frozen spinach, thawed1 cup mushrooms1/4 cup onion, chopped2 cloves garlic, minced1 unbaked deep dish pie shell
Preheat oven to 400 degrees F (200 degrees C). Line a cookie sheet with foil.
In a pan, heat olive oil and saute onion, garlic, mushrooms, and spinach.
In a large bowl, whisk together mayonnaise and milk until smooth. Whisk in eggs. Layer spinach/onion and cheese in pie shell, making several layers of each. Pour in egg mixture. Place quiche on prepared cookie sheet. Cover quiche with foil.
Bake in preheated oven for 45 minutes. Remove cover, and bake 10 to 15 minutes, or until top is golden brown and filling is set.
