Yummy Crepes

Ingredients
1 cup flour 1/2 cup powdered sugar1 cup skim milk2 lg eggs1 tsp lemon juice1 tsp vanilla extract (optional)
Directions
Whisk together all ingredients in a mixing bowl until batter is smooth. Pour or scoop the batter onto a preheated heavy skillet that has been coated with cooking spray, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.
