Carrot-Chickpea Salad

Ingredients
2 cups grated carrots1 can chickpeas, drained and rinsed1/4 cup fresh parsley, choppedjuice of 1 lemon2 tbsp. olive oil1 tsp. cumin1/2 c. crumbled fetasalt and pepper
Directions
Makes 10 1/3 c. servings
Combine carrots, chickpeas and parsley. Whisk together lemon juice, olive oil and cumin. Pour over carrot mixture and stir to combine. Crumble feta over, and combine. Season to taste.
Let stand for a bit before serving to let flavours combine, if preferred.
