Ingredients
4 (4-oz) skinless salmon fillets, about 1" thick1/4 teaspoon saltdash black pepperCooking spray (I prefer olive oil spray)2 cups cherry tomatoes, halved1/2 cup zucchini, finely chopped1 tablespoon olive oil1 (2 1/4-oz) can sliced ripe olives, drained
Directions
Makes 4 servings
Preheat oven to 425°. Sprinkle fish with salt & pepper on both sides. Place in an 11- x 7-inch dish coated with cooking spray. Combine tomatoes and remaining ingredients in a bowl; spoon over fish. Bake for 22 minutes.
