CAULIFLOWER & ASIAGO CHEESE casserole

1 large head Cauliflower, 1 cup raw or frozen chopped onion 4 large scallions chopped 1 clove garlic 2 packets Herb-Ox sodium free chicken boullion 1 tsp white vinegar 2 tablespoon capers 1 tbsp fat free mayonaise Pepper to taste 6 oz grated fresh asiago cheese
cut up the cauliflower and cook in microwave until just soft
saute the onion, garlic and callions in olive oil cooking sprayed pan
add all ingredients except half of the grated cheese into food processor and puree. Place in large casserole dish , top with remaining cheese and bake at 350
for 45min or until bubbly and cheese is lightly browned

I have edited the reciped and added scallions, an extra tablespoon of capers, and increased the asiago cheese to 6 oz instead of 2, I made it for a dinner party last night and all 4 women present asked for the recipe. It actually served 9 with a portion left over
