Mashed Potatoe Cakes

Ingredients
4Cup Leftover Mashed Potatoes1 large Egg.25 cup 2% milk1/8 cup flour Salt and pepper to taste
Directions
Place leftover mashed potatoes in a large bowl. Add raw egg and mix well. Add a little of the milk stir well. Add flour and mix. Should be the consitancy of slightly loose Mashed potatoes. If needed add more of the milk.
Heat skillet or griddle on med and spray with pam. Place heaping Tablespoon of mix in pan. Should spread slightly. Cook on each side until brown, Enjoy

These can be eaten with ketcup, sour cream, pancake syrup, Salsa, or your favorite dip/topping. (nutritional info is on plain cakes.)

    My Mom used to make potatoe cakes. I have made them, but never had the recipe. I just mixed the mashed potatoes, milk and flour to make a pancake mixture consistency. I'm pleased to have found this recipe with the measurements for the ingredients. - 2/9/09

    I make these also from my grandmothers german heritage, but we add celery, onion, and parsley. We also do not add flour to the mix, we form wet patties and pat both sides with flour. - 1/26/09

    i make this but i add chopped onion in mine and i use way more flour...just wondering how you keep it from sticking to hands and fallling apart...oh i see...i form into patties but you put in pan and spread out...may have to try that - 10/21/07
