Amy's Delicious Beef Stew

Ingredients
1.25 pounds stew beef1 tbls Montreal Steak Seasoning2 tbls all purpose flour1 cup red wine3 cups beef broth12 large baby carrots, cut in thirds2 large celery stalks, cut into 1/2 inch lengths3 medium potatoes, cut into large dice2 tbls olive oil
Directions
Place Montreal Steak Seasoning and flour into a large plastic bag. Add cubed beef and shake to coat. Heat olive oil in a large pot (preferably non-stick) over medium high heat. Brown beef cubes, in 2 or 3 batches, turning them until they're brown on all sides. Once all beef is browned, return it all to the pan, add the wine and beef stock, reduce heat to medium low, partially cover and simmer for 60-90 minutes or until beef is very tender. Add potatoes, carrots, and celery and simmer until vegetables are tender, about 20 minutes. If stew is too runny, whisk another tablespoon of flour into a small amount of cold water, add to stew and cook for additional 5-10 minutes.
