Eggplant Parm.

Ingredients
1 medium eggplant , 1/4 C bread crumbs, 1 egg white, 12 tb. spaghetti sauce., 4 oz. Mozzarella, 2 tb. Parmesan cheese.
Directions
Makes four slices. peel eggplant, slice in four slices long ways. dip pieces in egg white and into crumbs. cover pan with foil and spray with cooking spray, bake at 425 until tender about 15 to 20 min.. put on slice of Mozzarella on each piece spread with two to three tb. sauce sprinkle with Parmesan cheese. Put under broil until bubbly about three to five minutes. Serve with pasta and tossed salad.
