Roasted Tofu, Carrots and Radishes

2 tbs. balsamic vinegar, 1 tbs. extra virgin olive oil, 3 garlic cloves, chopped, 1 tbs. chopped rosemary, 1 tsp salt, 1 tsp pepper, 1 block of firm tofu chopped into 1 inch cubes, 2 carrots cut into strips, 6 medium radishes trimmed, 1 medium onion cut into wedges
1. Preheat the oven to 400 degrees. Cover a roasting pan or jelly roll pan with parchment paper.
2. Combine the vinegar, oil, garlic, rosemary, salt and pepper in a large bowl. Add in tofu, carrots, radishes and onion and toss gently to coat.
3. Turn the mixture in the roasting pan and spread into one layer. Be sure it is on one layer so all vegetables can caramelize in the oven and cook evenly. Roast until the vegetables are tender and lightly browned, turning once (25 - 30 minutes)
