Ingredients
2 cups organic wholewheat Flour4 teaspoons baking powder1/2 teaspoon baking soda3 tablespoons castor sugar1/2 teaspoon salt1 teaspoon ground cinnamon2 eggs, well beaten1 1/2 cups of milk1 teaspoon white vinegar2 tablespoons melted butter
Directions
Preheat your frypan.

Sift all the dry ingredients together in a medium sized bowl. Add the vinegar to the milk, Make a well in the centre of the dry ingredients and add the milk mixture and eggs. Whisk all ingredients together until smooth. Add extra milk if the batter is too thick to make pancakes.

Coat the frypan with a thin layer of butter. Drop spoonfuls of the mixture onto the hot pan and cook on each side till browned and the centre is cooked. You can tell this has happened on the first side when bubbles form and pop open, and they stay open. Adjust yor cooking time to suit your pan.

Serve with a little maple syrup drizzled on top, or add your favourite healthy topping - such as fresh strawberries, cooked apple chunks, frozen berries etc.
Makes 12 x 4" pancakes.
