Chicken and Lime Soup

1 c. diced onion4 minced garlic clove3 tbsp. Canola OIl20 oz. Chicken Breast (approx. 5)8 cups of Chicken Broth1 can Rotel Tomatoes2 limes (juice only)2 pkgs. Uncle Ben's Ready Whole Grain Medley
1. Saute onion and garlic clove in canola oil in large dutch oven until tender.
2. Add cubed chicken breast and cook for 2 minutes.
3. Add chicken broth, rotel tomatoes, juice from 2 limes, corn and rice.
4. Bring to boil and simmer for 30 minutes or until chicken is thoroughly cooked.
5. Makes 6 two cup servings.
