Ingredients
*Baked Potato, with skin, 2 small (Egg substitute, liquid (Egg Beaters),Scallions, raw, 1 cup, chopped Cheddar Cheese, .5 cup, shredded (Sour Cream, reduced fat, 2 tbsp
Directions
bake potatoes in microwave until tender. cut in med chuncks when cool enough to handle. In a pan spray cooking spray, add egg substitute cook half way, add eggs and scallions cook until eggs are completely cooked, top with low fat sour cream and grated cheese.
