Chunky Meatless Marinara

Ingredients
Directions
1/4 c. Olive oil1/2 c. chopped onion3 clove garlic, finely chopped2 tbsp. finely chopped parsley1 can (1 lb. 12 oz.) diced tomatoes, undrained2 cans (6 oz size) tomato paste2 tsp. Dried oregano leaves1 tsp. Dried basil leaves2 tsp. Salt1 tsp. Garlic powder1/4 tsp. Ground black pepper1/8 tsp. Cayenne
1. Sauté onion in oil until tender – about 5 minutes. Add onion and pasley and sauté another minute
2. Add rest of ingredients in order listed.
3. Add 1/2 c. water. Stir to mix well.
4. Bring to a boil. Reduce heat. Simmer uncovered 1 1/2 hours stirring occasionally.
Makes 12 1/2 c servings. Note: No salt added tomato paste and not adding the tsp of salt greatly lower the sodium amount.

So freaking amazing, I made it without onions because I and the rest of my siblings are are kinda picky eaters and I didn't have tomato paste so I subbed it for a can of condensed tomato soup. I had fresh parsley from my itsy-bitsy garden. Put it on top of ravioli, the tomatoes were so sweet. Yummm - 7/13/11
