Breakfast Casserole

Ingredients
1 (16 oz) pack frozen hash browns3 cups grated 2% lowfat cheddar cheese1 lb chopped turkey bacon cooked and crumbled1 3/4 cup egg beaters1 cup skim milk1 tsp salt1 tsp pepper
Directions
Preheat oven to 350 degrees. Layer hash browns, cheese, and bacon in a 9x13 dish. Mix eggs, milk, salt & pepper and pour over meat. Cover with foil and bake for 1 hour. Uncover and bake another 15 minutes or until edges are golden, and knife comes out clean.

To save time the morning of, I actually cook the cut the bacon into small pieces when raw and cook the night before on the stove.
