Omelet de Provence

Ingredients
2 cups sliced Fresh Mushrooms3 tbsp green onions, sliced1 clove garlic, minced4 servings egg beaters1/8 tsp thyme1/8 tsp basil1/8 tsp saltdash black pepper1 tsp olive oil1/4 cup shredded fat free mozzarella cheese1 medium plum tomato, chopped1tbsp finely shredded parmesan cheese
Directions
Coat unheated skillet with non-stick cooking spray. Preheat skilit over medium heat. Add mushrooms, green onions and garlic. cook and stir until mushroom are tender. using a slotted spoon, remove mushroom mixture from skillet set aside. if necessary, drain skillet, carefully wipe out with paper towels.

Combine eggs, herbs, salt and pepper, beat with whisk. Add half of oil into skillet; heat skillet over medium heat. Pour half of egg mixture into skillet. Begin making omlet. Sprinkle half of mushroom mixture into omlet before it set. Allow to cook until almost set, flip omlet allow other side to cook.

Sprinkle half of the mozzarella cheese. Remove from heat, folding in half. Sprinkle with half of the parmesan cheese.

Repeat with remaining oil, egg mixture, cheese and mushroom mixture.

Makes 2 omlets.
