Chicken San Joaqin

Ingredients
6 chicken thighs, skin and bone removed and cut in half4 T chopped shallots4 small cloves garlic, chopped1 cup sliced mushrooms8 roma tomatoes, cut in chunks20 large black olives, sliced in half1/2 cup white wine2 cups chicken broth1T olive oil
Directions
Salt and pepper chicken. Brown in olive oil. Remove chicken and set aside. Pour off remaining oil and set aside. Pour wine in pan and heat, stirring to scrape up bits of chicken. Pour off and set aside. Pour oil back in pan and saute garlic and shallots in oil until soft. Add mushrooms and sautee until soft. Pour in chicken broth, add chicken, wine, olives and tomatoes. Cover and simmer in oven or on stovetop for about 45 minutes. Spoon over cooked rice and serve.
