Rhonda's Healthier Lasagna

2 lbs of lean ground beef2 onions2 cups of water3 tbs of Parsley Flakes1 - 28 oz can of Diced Tomatoes2 - 26 oz jars of spaghetti sauce6 tsp. minced Garlic4 tbsp. Italian Seasoning4 cups Low Fat Cottage Cheese3 cups Ricotta Cheese (I used whole Milk - it's what I had)2 Eggs5 oz bag of Fresh Spinach - rinsed5 dry Lasagna Noodles1 cup Mozzarella Cheese
Brown Ground Beef - when this is done, put it in a strainer and run HOT water over the beef to rinse off all the excess fat.
While Beef is cooking, dice onions.
In a large bowl combine both jars of spaghetti sauce, water, parsley flakes, diced tomatoes, garlic, italian seasoning, cottage cheese, ricotta cheese and eggs.
Preheat oven to 350 degrees.
When beef is rinsed, combine with the sauce.
When sauce is finished, spray a 9x13 glass pan.
If the kids are picky about the spinach then put it in a blender and add it to the sauce before assembling. Psych them out!!! hahaha!!! You can't even taste the spinach!!!
Layers are:
One to two ladles of sauce in bottom.
Spinach.
Dry Noodles.
One to two ladles of sauce.
Spinach.
Dry Noodles.
One to two ladles of sauce.
Mozzarella Cheese.
Place on a pan to catch any bubble over sauce. Cover with aluminum foil for the entire cooking session 60-90 minutes. The last 5-10 minutes uncover and let the cheese on top begin to brown.
I sliced my 9x13 lasagna into 18 slices for the nutrition info.

This recipe makes enough to make three 9x13 pans of lasagna. If you make this you should have 18 slices for one 9x13 pan. This is a make it once recipe where you can actually make one pan of lasagna and fill two gallon ziplock bags for two future pans of lasagna.
