Portuguese Beans & Rice

Ingredients
1 can beans, pink or red1 onion chopped3 tbs olive oil1 tbs dried parsley1 clove or more chopped garlic1 cup white rice4 cups watersalt back pepperred wine vinegar, 2 TBS
Directions
Saute onion in olive oil until translucent then, add parsley, garlic, salt, pepper and beans (undrained). Saute for a minute. Add hot water and rice. Stir and bring to a boil. Lower and simmer, uncovered, for about 30 minutes, or until most of water is absorbed. Stir in vinegar, let cook another minute or two. This will not be "dry" like regular rice.
