Chicken Spinach Curry

1 tbsp olive oil1 medium onion, chopped1/4 cup whole wheat floursalt and pepper1.5 lbs chicken breast cut in large strips1 lb bag frozen chopped spinach1 14 oz can light coconut milk
Heat the olive oil in large non-stick skillet and add onion, cooking until browned. Mix flour, salt and pepper in a plastic bag. Add chicken and shake until coated in flour mixture. Add chickens strips to onion, pushing the onions to the side and brown chicken on both sides. Sprinkle curry powder over chicken and add spinach and coconut milk. Reduce heat, cover and cook for 30-45 minutes. Season with more curry powder and salt and pepper to taste.

The amount of curry really depends on your taste buds an the strength and type of curry. I use several tablespoons but start with less. You can always add more.
