Spinach-Wild Rice Casserole

1 large bag of baby spinach (8 cups)2 cups sliced mushrooms1 cooked box of wild rice6 wedges of laughing cow light swiss cheese
Cook rice without butter or oil according to box directions. In the microwave place spinach and cook for 3 minutes on high, add mushrooms and cook on high for 2 minutes. Chop with chopper in bowl. Add wedges of cheese cut up and mash in with spoon or fork. Stir in cooked rice. Spread in 9 x 13 pan. Makes 6 servings.
