2 cups jasmine rice (1 cup uncooked)1/4 cup water2 tablespoons less-sodium soy sauce2 tablespoons oyster sauce2 teaspoons rice vinegar2 teaspoons extra virgin olive oil1 pound chicken cutlets cut into strips1 cup red bell pepper strips1 cup frozen shelled edamame (green soybeans)
prepare rice per package directions. while rice is cooking combine water and next 3 ingredients in a small bowl and whisk. Heat oil in a large nonstick skillet over medium high heat. Add chicken and cook 6 minutes or until browned. Add bell pepper strips and edamame and cook until crisp-tender, stirring frequently (about 3 minutes). Add soy sauce mixture and cook 1 minute stirring constantly. Serve over 1/2 cup rice.
