German-Style Potato Salad (Vegetarian Times)

Ingredients
8 oz potatoes, yukon gold or baby red, cut into 1 by 1/2-inch slices1 cup green beans1/4 cup chopped green onions2 tbsp olive oil2 tbsp cider vinegar3 tbsp chopped parsley and dill4 cups (loosely packed) baby spinach
Directions
Boil potatoes about 8 minutes or until tender. Add beans during last few minutes of cooking.
Meanwhile, heat oil in skillet. Add onions and cook 3-4 minutes, until tender but not browned. Remove from heat and add vinegar.
Drain potatoes and green beans. Toss with oil mixture, herbs, and salt and pepper to taste.
Serve warm on bed of spinach.

Serves 2 as a small meal or giant side dish. Fantastic with vegetarian sausages, pork chops, or pot roast.
