Potato Crusted Chicken Strips

Ingredients
1 whole boneless, skinless chicken breast (2 halves) cut in narrow strips1 egg white2 T. water3/4 cup dehydrated potato buds like Betty Crockerfresh ground pepper1 tsp. garlic powder1/8 tsp. seasoned salt (Lowrys)
Directions
Heat a large skillet on med high. Add 1 tsp. olive oil.

Beat egg white in shallow bowl with 2 T. water in a shallow bowl.
Combine potato buds with pepper to liking and the garlic pwdr in another shallow bowl. Mixing with fingers, crushing potatoes slightly.
Sprinkle salt over chicken.
Coat chicken in egg mixture and then in potato mixture.
Place in frying pan and cook until brown. Add the other tsp. of olive oil and flip over chicken to brown on second side. Cook until no pink in the middle.
Serves 4.
Dinner suggestions: Serve with brown rice and green beans and garlic or my recipe for Grilled Vegetables.
