Pickled Black Eyed Peas

Ingredients
16 oz Dried Balck Eyed Peas12 Whole Peppercorns2 Cloves of Garlic Minced1 small red onion diced1t white balsamic vinegar1t Olive Oil1t Salt_________________5T Lemon Juice3T Olive Oil2T Fresh minced Thyme Leaves or 1T Dry thyme Leaves
Directions
Cover Beans with water, soak 2 hours. Drain.
Sautee onion, garlic in oil. Add Beans, vinegar , peppercorns, salt and enough water to cover the beans 2 inches. Cook until tender Approx 30-40 minutes. Drain rinse under cold water, remove peppercorns.

Combine last 3 ingredients in a bowl. Whisk. Mix with beans in a bowl and serve. Can also marinate, if you choose to refrigerate, bring to room temperature before serving. Makes 12 side dish servings.
