Macaroni Salad w/ Bacon, Onions, Peppers, & Creamy Dijon Dressing

Ingredients
Dressing:1 1/2 cup (12ounces) 1/3-less-fat cream cheese3/4 cup chopped shallots3/4 cup reduced-fat mayonnaise (or salad dressing)12 teaspoons Dijon mustard6 tablespoons lemon juice3 tablespoon white wine vinegar3/4 teaspoon black pepperSalad:24 ounces uncooked large elbow macaroni2 cups finely diced red bell pepper3/4 cup thinly sliced green onions1/4 cup chopped fresh flat-leaf parsley12 lower-sodium bacon slices or turkey bacon, cooked and crumbled
Directions
To prepare dressing, combine all the dressing ingredients in a bowl (or a food processor to make it smoother), and and mix. Cover and chill.

To prepare salad, cook pasta according to package directions, omitting salt and fat. Drain; rinse with cold water. Combine the dressing, pasta and the remaining salad ingredients. Cover and chill until ready to serve.

    I used Gluten free pasta and reduced fat cream cheese. I also used aple cider vinager instead of white wine vinager because thats what I had my husband loved it and he usually does not like macaroni salad. - 9/1/14
