Avocado Apple Salad

Ingredients
1 avocado, quartered, then coarsly chopped3/4 c fuji apple, chopped1T olive oil2t dijon mustard1/4 c onion, finely chopped1t salt1t fresh ground coarse black pepperdash of lemon juice
Directions
In a medium size mixing bowl, mix together dijon mustard, salt, pepper and olive oil. Add chopped apple, avocado and onion. stir until well mixed and a bit creamy. Sprinkle with lemon juice to prevent browning, cover and let sit in the refridgerator for an hour. Serve on your favorite bread or roll with tomatoes and lettuce.
