Ingredients
diced tomatoes, .5 cup, draineddiced onion, .5 cuplentils, 1 cupdefrosted spinach, all liquid squeezed out - 1 pkg.1 cup watersalt, pepper to tasteolive oil, 1 tbsp.
Directions
bring water to a boil.
add lentils, onions, and olive oil.
reduce heat to low, cover, and simmer for 10 minutes.
Stir gently, then add tomatoes and spinach, salt , pepper.
simmer for remaining 10 minutes.
make 6 1/4 cup servings. Believe me, that is enough; it fills you up!

    After 20 minutes, the lentils were still crunchy. I had to add more water and cook for another 20 minutes. It wasn't very flavorful. I wouldn't make it again. - 7/24/12
