Maria's Cheesy Chicken & Bean Enchiladas

Ingredients
Diced cooked chicken (I use 2 packages of the pre-cooked kind)1 packet of reduced-sodium taco seasoning mix2/3 cup water8oz block of reduced fat velveeta cheese1 large can of enchilada sauce10 flour tortillas1 can of fat free refried beans bag of 2% shredded mexican 4 cheese blend
Directions
Preheat oven to 400. Cook chicken on the stove in a pan. Add the taco seasoning mix and 2/3 cup of water. Cook to a boil and reduce the heat. Add in the velveeta cheese. Let it melt. While it is melting, pour 1/2 the can of enchilada sauce into a glass (lasagna) pan. Take the tortillas and add some refried beans and then some of the cheesy chicken mixture. Roll the tortilla and place seam down over the enchilada sauce. Cover the enchiladas with the other 1/2 of the enchilada sauce and then smother with the shredded cheese. Bake in the oven for 15-20 minutes, until the cheese on top is bubbly!

Makes 10 enchiladas- 1 enchilada per serving. Serve with rice on the side!

    Made this with whole wheat tortillas, and it was really filling. It was a little too salty for me even with using the reduced-sodium packets. I may just use a little cumin next time instead. - 11/4/08
