Eggplant garbanzo humus

Ingredients
1 cup roasted eggplant1 cup ccoked or canned garbanzos3 tbsp tahini paste5 cloves garlic mashed1 tsp olive oil1/2 tsp salt1 oz or 3 tsp lime juice (preferably key limes)
Directions
1. Roast 2-3 med. size eggplants directly over flame until soft and black.. Place in cool water, then peel blackened skin off and rinse.
2. Place all ingredients in food processor or blender and blend until smooth.
3. Cool and use as dip for veggies, over rice, salads and for pita or other types of bread.

Makes about 1.5 cups or 4-5 servings.
