Mexican Pasta

Ingredients
1 Can Can Mild Rotel Tomatoes with green chili1 Small onion diced1 Cup sweet peppers diced (red and yellow) I use the little ones in the bag1 bag or box Whole Wheat Angel Hair or thin Vermicelli Pasta (One small box or bag)˝ to 1 C Chunky Salsa or Picante Sauce – can be mild or spicy (1/2 cup in nutritional1 tsp Ground pepper1tbls Mexican Seasoning (Dried – I used World market – but any with dried cilantro, and other herbs will work – or omit.1 tbls Olive oil
Directions
Directions:
Cook Pasta according to package directions – to al dente. Do not overcook. Drain
In large skillet or sauce pan sauté onions and peppers in olive oil until tender.
Strain Rotel Tomatoes but reserve liquid.
Add cooked pasta to onions and peppers.
Add Rotel, pepper and seasoning. Toss lightly. Add ˝ cup of salsa and reserved liquid from Rotel.
If you want more sauce add as much Salsa or Picante sauce as you want. Salt if needed
I serve with shredded Mexican blend cheese as a side dish to chicken or any Mexican food. (Add cheese calories if you are adding to recipe)
