Teriyaki Roasted Salmon

Cooking spray8 salmon fillets, 3-4 ounces eachSalt and freshly ground black pepper (optional)1/2 cup reduced-sodium soy sauce2 tablespoons molasses1 tablespoon brown sugar2-3 cloves garlic, minced1 (11-ounce) can mandarin oranges, drained, or 1 (8 ounce) can crushed pineapple, drained
Preheat oven to 400 degrees F. Coat a large baking dish with cooking spray.
Season salmon with salt and pepper, if desired, and place in prepared baking dish. In a small bowl, whisk together soy sauce, molasses, brown sugar, and garlic. Pour mixture over salmon in pan. Arrange oranges or pineapple over salmon, set aside.
Roast salmon for 20-25 minutes, until fish is fork-tender.
