Ellen's Apple Oatmeal Griddlecakes

1.5 cups Buttermilk0.5 cup Egg Substitute1 cup Flour0.75 cup Quick Oats2 tsp Baking Powder0.5 tsp Baking soda0.5 tsp Salt2 cups Chopped Apple (peeled)1.25 tsp Cinnamon
Makes 12 griddle cakes (4 servings)
In large Pyrex measure,
Mix Buttermilk and Egg Substitute -- stir.
In small bowl stir together flour, oats, baking powder, baking soda and salt.
Stir dry ingredients into liquid ingredients.
Let sit 10 minutes.
Meanwhile peel and finely chop large apple (2 cups).
Toss apple chunks with cinnamon.
Stir into batter.
Heavily spray medium hot non-stick frying pan with Crisco Butter No-Stick Spray. Use 1/3 cup batter for each griddlecake. When quite a few bubbles appear, it is about time to flip the griddlecake. Serve with choices of yogurt and sugar free or regular syrups.
