1 cup red bell peppers, chopped1 cup green bell peppers, chopped1 cup sweet onion, chopped2 Tblsp. light olive oil1 cup low-fat Mexican blend taco cheese2 eggs1/2 cup egg substitute2 Tblsp. basil1 cup salsa (Chi-Chi's)salt, pepper to taste
Saute vegetables in 1 tbsp. light evoo in 8 ,in saute pan. Salt, pepper, and sprinkle 1 T basil. In small bowl mix eggs and egg substitute. Pour mixture over vegetables.
Sprinkle cheese on top. Cook at medium low heat until cheese begins to bubble and eggs are set. Sprinkle remaining basil on top. Place under low broiler setting for 5 min. or until cheese darkens.
Cut into four servings. Dollop 1/4 cup salsa over top.
Refrigerate leftover servings in plastic containers. Reheat in microwave on high setting for 2 mins.
