Ingredients
1 x 400g tin of chick peas1 tbsp oilve oil1 small onion cjopped1/2 tsp ginger2 cloves garlic2/3 tbsp curry powder1/2 400g tin of canned tomatoes2 tbsp coconut milk
Directions
Serves 2-3 (Nutritional info worked out to serve 2)

1- Heat oil in a frying pan and fry onions until they begin to brown, then add ginger, curry paste and garlic. Cook for a minute.

2- Add tomatoes, coconut milk and chickpeas. Season and cook for 5 minutes until the mixture thickens
