Ingredients:Budweiser Select 55 Calorie Light Beer, 24 oz (remove)*London Broil, 32 oz (remove)Flour, .125 cup (remove)Garlic powder, 1 tsp (remove)Salt, 1 tbsp (remove)Pepper, black, 1 tsp (remove)Extra Virgin Olive Oil, 1 tbsp (remove)Kroger Thick & Chunky Mild Salsa, 96 tbsp (remove)Potato, Idaho, 7.55 serving (remove)Zucchini, 6 cup, sliced (remove)
In med. bowl combine steak, flour, garlic powder, salt, and pepper. Toss until the beef is evenly coated.Let stand for 15 min.
Place large nonstick soup pot over med-hi heat. When hot, add oil, then beef. Cook until browned all over, about 1 min per side. Add beer and salsa, stir to submerge the beef. Cover, reduce heat to low, and simmer for 1 hr.
Add potatoes, submerge in liquid cover and simmer for 45 min longer. Gently stir in zucchini and simmer for 10 min longer, or until meat, potatoes, and veggies are tender. Season w/ additional salt and pepper, if desired. Serve immediately or refrigerate for up to 3 days.
